REFRESHING CUCUMBER SALAD WITH TUNA

The base of this salad is the Persian cucumber. Each is about 6 inches long, about half the size of a regular cucumber, and thin-skinned. You could also use English cucumbers, which are seedless and have a tasty thin skin as well. All cucumbers are a natural remedy for water retention and will help ease bloating.

½ teaspoon grated lemon rind

3 tablespoons lemon juice

3 tablespoons olive oil

2 tablespoons red wine vinegar

2 teaspoons finely chopped fresh oregano

½ teaspoon kosher salt

¼ teaspoon black pepper

4 ounces canned tuna packed in water, drained

⅓ cup Kalamata olives, pitted and halved lengthwise

⅓ cup thinly sliced red onions

2 cups cherry tomatoes, halved

5–6 Persian cucumbers, halved lengthwise and cut into ½-inch-thick slices (about 3 cups)

4 ounces low-fat feta cheese, crumbled

In a large bowl, whisk together the lemon rind, lemon juice, oil, vinegar, oregano, salt, and pepper.

Add the tuna, olives, onions, tomatoes, and cucumbers; toss gently to combine.

Sprinkle with feta cheese.
